Vegan spring rolls

Vegan spring rolls recipe:


  • 8-10 spring roll wrappers
  • 1 cup cooked vermicelli noodles
  • 1/2 cup shredded carrot
  • 1/2 cup sliced cucumber
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced avocado
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped peanuts
  • Sweet chili sauce for dipping


  1. Prepare the vermicelli noodles according to the package instructions, then rinse with cold water and set aside.
  2. Slice all of the vegetables and set aside.
  3. Fill a large bowl with warm water. Dip a spring roll wrapper into the water for 10-15 seconds, until it softens.
  4. Place the softened wrapper on a clean surface. Place a small handful of vermicelli noodles in the center of the wrapper.
  5. Add a small amount of each vegetable on top of the noodles, along with some cilantro, mint, and chopped peanuts.
  6. Fold the sides of the wrapper over the filling, then roll the wrapper tightly from bottom to top.
  7. Repeat with the remaining spring roll wrappers and filling.
  8. Serve the spring rolls with sweet chili sauce for dipping.
