  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup rolled oats
  • 1/2 cup finely chopped onion
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon nutritional yeast
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, combine the chickpeas, rolled oats, onion, garlic, tomato paste, soy sauce, nutritional yeast, oregano, salt, and black pepper. Pulse until everything is well combined but still slightly chunky.
  3. Transfer the mixture to a mixing bowl and stir in the chopped parsley.
  4. Form the mixture into small balls, about 1-2 inches in diameter.
  5. In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook for 2-3 minutes on each side, or until lightly browned.
  6. Transfer the meatballs to a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked through and crispy on the outside.
  7. Serve the vegan meatballs hot, garnished with additional chopped parsley, if desired.
