- 1 can of chickpeas, drained and rinsed
- 1/2 cup rolled oats
- 1/2 cup finely chopped onion
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon nutritional yeast
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil

- Preheat the oven to 375°F (190°C).
- In a food processor, combine the chickpeas, rolled oats, onion, garlic, tomato paste, soy sauce, nutritional yeast, oregano, salt, and black pepper. Pulse until everything is well combined but still slightly chunky.
- Transfer the mixture to a mixing bowl and stir in the chopped parsley.
- Form the mixture into small balls, about 1-2 inches in diameter.
- In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook for 2-3 minutes on each side, or until lightly browned.
