Vegan eggplant steaks!
- 2 large eggplants
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika

- Salt and pepper, to taste
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the eggplants lengthwise into 1/2-inch thick slices.
- In a small bowl, whisk together the olive oil, balsamic vinegar, soy sauce, smoked paprika, garlic powder, salt, and pepper.
- Brush the eggplant slices on both sides with the marinade.
- Place the eggplant slices in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, or until the eggplant is tender and lightly browned, flipping the slices halfway through.
- Remove the eggplant steaks from the oven and serve hot, garnished with fresh herbs if desired.
