Vegan eggplant steaks!


  • 2 large eggplants
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste


  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the eggplants lengthwise into 1/2-inch thick slices.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, soy sauce, smoked paprika, garlic powder, salt, and pepper.
  4. Brush the eggplant slices on both sides with the marinade.
  5. Place the eggplant slices in a single layer on the prepared baking sheet.
  6. Bake for 25-30 minutes, or until the eggplant is tender and lightly browned, flipping the slices halfway through.
  7. Remove the eggplant steaks from the oven and serve hot, garnished with fresh herbs if desired.
