Vegan Green Pumpkin Cake


  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup sugar
  • 1 cup unsweetened almond milk
  • 1/2 cup vegetable oil
  • 1 cup pureed green pumpkin (you can also use canned pumpkin puree)
  • 1 tablespoon apple cider vinegar
Vegan Green Pumpkin Cake


  1. Preheat your oven to 350°F (180°C) and grease a 9-inch (23cm) cake pan.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, mix together the sugar, almond milk, vegetable oil, pumpkin puree, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Pour the batter into the prepared cake pan and smooth out the top with a spatula.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely before slicing and serving.

You can also top your vegan green pumpkin cake with your favorite vegan frosting, such as vegan cream cheese frosting or a simple powdered sugar glaze. Enjoy!
