Low Carb Chicken Stew with Keto Cauliflower Rice

  3. Add the carrots, celery, bell pepper, and mushrooms to the pot. Cook for about 5 minutes, until the vegetables start to soften.
  4. Return the chicken to the pot and pour in the chicken broth. Stir in the dried thyme and rosemary. Season with salt and pepper to taste.

  • 1 medium head of cauliflower
  • 2 tablespoons olive oil

  • Optional: 1 tablespoon soy sauce or tamari for added flavor


  1. Cut the cauliflower into florets and discard the tough core. Place the florets in a food processor and pulse until the cauliflower resembles rice grains.
  2. Heat the olive oil in a large skillet or wok over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
  3. Add the cauliflower rice to the skillet. Stir well to combine with the onion and garlic. Season with salt and pepper.
  4. Cook the cauliflower rice for about 5-7 minutes, stirring occasionally, until it becomes tender. Be careful not to overcook it to maintain a slightly crunchy texture.
  5. If desired, drizzle soy sauce or tamari over the cauliflower rice and toss to evenly distribute the flavor.
  6. Serve the keto cauliflower rice as a side dish or as a base for other low carb stir-fries or dishes.
