Keto Cauliflower Mac and Cheese


  • 1 medium head of cauliflower, cut into florets
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons cream cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Optional toppings: chopped cooked bacon, sliced green onions


  1. Preheat your oven to 375°F (190°C).
  2. Steam or boil the cauliflower florets until tender, about 5-7 minutes. Drain well and set aside.
  3. In a saucepan over medium heat, heat the heavy cream until hot but not boiling. Reduce the heat to low and stir in the cream cheese until melted and smooth.
  4. Add the minced garlic, Dijon mustard, onion powder, nutmeg, salt, and pepper to the cream mixture. Stir until well combined.
  5. Remove the saucepan from the heat and stir in the shredded cheddar cheese and grated Parmesan cheese until melted and creamy.
  6. Place the cooked cauliflower in a greased baking dish and pour the cheese sauce over it, ensuring the cauliflower is evenly coated.
  7. Bake in the preheated oven for 15-20 minutes or until the top is golden and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Serve the cauliflower mac and cheese as a main dish or as a side. You can also sprinkle chopped cooked bacon and sliced green onions on top for extra flavor and crunch.
