Ingredients:
- 1.5 pounds (680g) beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 medium turnip, peeled and diced
- 4 cups beef broth (preferably homemade or low-sodium)
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the beef cubes to the pot and brown them on all sides, working in batches if necessary. Remove the browned beef from the pot and set it aside.
- In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
