Keto Beef Stew


  • 1.5 pounds (680g) beef stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 medium turnip, peeled and diced
  • 4 cups beef broth (preferably homemade or low-sodium)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the beef cubes to the pot and brown them on all sides, working in batches if necessary. Remove the browned beef from the pot and set it aside.
  3. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
  4. Add the sliced carrots, celery, and diced turnip to the pot. Cook for about 5 minutes, stirring occasionally.
  5. Return the browned beef to the pot with the vegetables.
  6. In a small bowl, whisk together the beef broth, tomato paste, dried thyme, and dried rosemary until well combined. Pour the mixture into the pot.
  7. Season with salt and pepper to taste. Stir everything together.
  8. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  9. Once the beef is tender, taste the stew and adjust the seasoning if needed.
  10. Serve the keto beef stew hot, garnished with freshly chopped parsley.
